Ahi laulau with vegetables; Coconut-shiitake basmati rice

Assembled on the leaves, the laulau is ready to be wrapped.

A generous Hawaiian ahi tuna steak sits on a foundation of nappa cabbage, oyster mushrooms, green beans and ginger. Carrots and green and red onion add a bit of color.

Each packet is dosed with white wine and shoyu before being sealed tight in a laulau packet of banana and ti leaf (lau means ‘leaf’ in Hawaiian) and then baked.

The package is unwrapped and the aroma wafts out...
