Coconut-Shiitake Basmati Rice

Recipe: Coconut-Shiitake Basmati Rice

Summary: Long grain white rice is cooked with dried mush­rooms and coconut milk

Ingredients

  • 3 C. White Basmati or Jasmine Rice
  • 4 C. water
  • 1 C. coconut milk
  • 14 C. thin sliced dried shi­itake (not the whole ones)
  • 1 t. sea salt
  • 14 C. thin bias-sliced green onions
  • toast­ed sesame seeds

Instructions

  1. Chop any large pieces of dried shi­itake. Remove any big pieces of stem–it is pret­ty tough.
  2. Put the water, rice, dried mush­rooms, coconut milk and salt in a rice cook­er. Flip the switch. (Or cook on the stove­top in your usu­al way)
  3. When the rice has stopped cook­ing and has had a chance to rest for 15 min­utes, turn it out into a large bowl. Mix in the green onions, fluff­ing the rice.
  4. The rice is ready to serve with sprin­kles of sesame seeds.
