Lokelani Granola

Recipe: Lokelani Granola

Summary: Homemade gra­nola


  • 8 C. oat­meal
  • 4 C. rolled spelt or bran
  • 2 C. coconut
  • 2 C. nuts
  • 5 small ripe apple bananas or 3 ripe main­land bananas
  • 34 C. organ­ic cane sug­ar
  • 1 C. vir­gin coconut oil
  • 2 t. ground cin­na­mon
  • 1 t. sea salt
  • 2 C. dried fruit
  • 2 C. plain, organ­ic puffed cere­al like rice, corn or mil­let


  1. Preheat oven to 250º
  2. Put the first set of ingre­di­ents in a large bowl and mix
  3. Put the bananas, oil, sug­ar, spices and salt in a food proces­sor and blend smooth
  4. Pour this bend­ed mix­ture over the oats and thor­ough­ly mix, until every­thing is coat­ed
  5. Put the mix­ture into two 12 sheet pans or oth­er large cook­ie sheets
  6. Bake for about 1 12 hours, mix­ing the browned edges in every 20 min­utes or so
  7. After bak­ing, put the gra­nola into a large bowl and mix in the dried fruit and puffed cere­al
  8. Keep in a jar or oth­er air­tight con­tain­er

Quick Notes

Nuts must be raw: cashews, almonds, mac nuts, etc.

Dried fruit can be any­thing, but chop the big­ger ones into small pieces: raisins, sul­tanas, man­go, dates, cran­ber­ries, figs, cher­ries, etc.

Spices can include nut­meg, gin­ger, car­damom, alspice.


Use grat­ed fresh, mature coconut meat instead of dried.

We also some­times add grat­ed gin­ger.

Cooking time (dura­tion): 2 hours

Yield: 6 quarts
