Orange fried rice with beet-tomato salad

Fried rice was invented for the purpose of using leftovers, and so it is here. It’s often an opportunity to experiment with flavors, and in this case, some orange marmalade was used to flavor the sauce. The overall effect is not all that Chinese, but delicious and of course a salad of tomatoes, beets and cucumbers from the farmer’s market is a welcome side dish.
