“Potatoes and kale”

This dish—otherwise known as the “Lokelani Blue Plate Special”—is a staple indeed. Much of this comes from the garden, and is known for being a good choice even when the veggie garden is low. Kale being one of the more reliable vegetables here, it gets a lot of play. Nutritious and satisfying.

Potatoes (or sweet potatoes) are tossed in oil and spices, then roasted to a delicious soft, brown. We add garlic about midway through so it doesn’t burn.

Kale is seared with a little oil and chilies, then a heap of chopped garlic and finished with white wine, a dash of shoyu and fresh orange juice. Simmer till glazed by the juice.
