Ahi laulau with vegetables; Coconut-shiitake basmati rice

Assembled on the leaves, the laulau is ready to be wrapped.

A gen­er­ous Hawaiian ahi tuna steak sits on a foun­da­tion of nap­pa cab­bage, oys­ter mush­rooms, green beans and gin­ger. Carrots and green and red onion add a bit of color.

Each pack­et is dosed with white wine and shoyu before being sealed tight in a laulau pack­et of banana and ti leaf (lau means ‘leaf’ in Hawaiian) and then baked.

The pack­age is unwrapped and the aro­ma wafts out…
