Recipe: Coconut-Shiitake Basmati Rice
Summary: Long grain white rice is cooked with dried mushrooms and coconut milk
Ingredients
- 3 C. White Basmati or Jasmine Rice
- 4 C. water
- 1 C. coconut milk
- 1⁄4 C. thin sliced dried shiitake (not the whole ones)
- 1 t. sea salt
- 1⁄4 C. thin bias-sliced green onions
- toasted sesame seeds
Instructions
- Chop any large pieces of dried shiitake. Remove any big pieces of stem–it is pretty tough.
- Put the water, rice, dried mushrooms, coconut milk and salt in a rice cooker. Flip the switch. (Or cook on the stovetop in your usual way)
- When the rice has stopped cooking and has had a chance to rest for 15 minutes, turn it out into a large bowl. Mix in the green onions, fluffing the rice.
- The rice is ready to serve with sprinkles of sesame seeds.
