Fried rice: I love this stuff, it reminds me of old-fash­ioned Chinese restau­rants of the kind that served egg foo yung and had a neon sign adver­tis­ing chop suey! What a great way to enjoy left­overs. (what ischop suey’ any­way?)

Fermented black beans are a won­der­ful fla­vor­ing; they add a reli­ably strong bass note to your stir fry sauce.
