Orange fried rice with beet-tomato salad

Fried rice was invent­ed for the pur­pose of using left­overs, and so it is here. It’s often an oppor­tu­ni­ty to exper­i­ment with fla­vors, and in this case, some orange mar­malade was used to fla­vor the sauce. The over­all effect is not all that Chinese, but deli­cious and of course a sal­ad of toma­toes, beets and cucum­bers from the farmer’s mar­ket is a wel­come side dish.
